I know, those two don't really go together...
Anywho, it has been a rainy week thus far, and I hear it's only going to continue (at least that's what the weather men tell me). Luckily the only time we got out today it wasn't raining (unlike yesterday where we were caught in a monsoon), and we switched out our power cord for a new one at the Apple store (all day without a computer, what?!?) and had dinner at Mellow Mushroom.
Last night I made a delicious dinner concoction. After the aforementioned monsoon, Mills and I decided we weren't going to the grocery store, so we had to be resourceful. Lucky for us, it turned out well! Here's what I found to use:
-frozen chicken breasts
-frozen tomatoes {could've used canned if I didn't have these frozen from the garden}
-two ears of corn, cut off the cob {Nicholas' parents brought a lot to us this weekend}
-1 can of green chiles
-3/4 jar of salsa that I had in the fridge
-spices: cumin, salt&pepper, garlic salt, chili powder
I threw it all in the crock pot, on high, around 1pm, and by dinnertime the whole house smelled amazing and we had the most delicious "Mexican Chicken!"
{don't make fun of my 1980 crock pot. i think it was a wedding present to my parents, haha, but it does the job...maybe one day I'll replace it with a shiny, new one!}
Thirty minutes before we were ready to eat, I added 4oz of light cream cheese and two tablespoons of plain greek yogurt to make it a little creamy. Wowswers, it was GOOD!
I made some rice, and we had make your own dish - tacos, nachos, whatever! :) I think I'm gonna use the leftovers on baked potatoes for Wednesday night. AND, I just popped a few tablespoons of the chicken mixture into the little food processor and Mills' dinner was ready, too! It appears he's a fan of mexican food. :)

Oh, and I also made my trusty peanut butter cookies...made with THREE ingredients, how easy is that?!?
-1 egg
-1 cup sugar (I use the Splenda blend)
1 cup peanut butter (your choice, but I prefer crunchy Jif, reduced fat)
Stir, then bake for 10 minutes in preheated 350 degree oven, and voila! The yummiest peanut butter cookies!

Sorry, buddy...you're not allowed to have nuts until you're a year old...no cookies for you = bummer. :(
Which brings me to Halloween candy {which you can't have either, sweet boy} BUT you sure can dress up!!! :) So let's focus on the positive here... :)
I'm thinking either:
Lion - because Mills takes his monthly pictures with his lion stuffed animal, so it would be fitting of the first year's Halloween, right?
Giraffe - because Mills does love giraffes! Between Sophie and his sleep sounds giraffe, he's practically always got one with him!
Monkey - just because he'd be a stinkin' cute monkey in this little costume.
Or, a little Frog Prince - because A: he is my little prince, and B: how many more years will he just beg me to dress up like a frog prince for Halloween?? Haha, gotta get my choices in while I can! :)
And after all, he does help do the dishes...so that should count as prince material in any girl's book! :)

I love that second Lion costume, it is beyond adorable. The second frog is so cute too. Who am I kidding Mills would look precious in any of these!
