Tuesday and Costumes...

I know, those two don't really go together...
Anywho, it has been a rainy week thus far, and I hear it's only going to continue (at least that's what the weather men tell me). Luckily the only time we got out today it wasn't raining (unlike yesterday where we were caught in a monsoon), and we switched out our power cord for a new one at the Apple store (all day without a computer, what?!?) and had dinner at Mellow Mushroom.
Last night I made a delicious dinner concoction. After the aforementioned monsoon, Mills and I decided we weren't going to the grocery store, so we had to be resourceful. Lucky for us, it turned out well! Here's what I found to use:
-frozen chicken breasts
-frozen tomatoes {could've used canned if I didn't have these frozen from the garden}
-two ears of corn, cut off the cob {Nicholas' parents brought a lot to us this weekend}
-1 can of green chiles
-3/4 jar of salsa that I had in the fridge
-spices: cumin, salt&pepper, garlic salt, chili powder
I threw it all in the crock pot, on high, around 1pm, and by dinnertime the whole house smelled amazing and we had the most delicious "Mexican Chicken!"
{don't make fun of my 1980 crock pot. i think it was a wedding present to my parents, haha, but it does the job...maybe one day I'll replace it with a shiny, new one!}
Thirty minutes before we were ready to eat, I added 4oz of light cream cheese and two tablespoons of plain greek yogurt to make it a little creamy. Wowswers, it was GOOD!
I made some rice, and we had make your own dish - tacos, nachos, whatever! :)  I think I'm gonna use the leftovers on baked potatoes for Wednesday night.  AND, I just popped a few tablespoons of the chicken mixture into the little food processor and Mills' dinner was ready, too! It appears he's a fan of mexican food. :)
My trusty little helper:
Oh, and I also made my trusty peanut butter cookies...made with THREE ingredients, how easy is that?!?
-1 egg
-1 cup sugar (I use the Splenda blend)
1 cup peanut butter (your choice, but I prefer crunchy Jif, reduced fat)
Stir, then bake for 10 minutes in preheated 350 degree oven, and voila! The yummiest peanut butter cookies!
My sweet boys waiting on the cookies to come out of the oven.
Sorry, buddy...you're not allowed to have nuts until you're a year old...no cookies for you = bummer. :(

Which brings me to Halloween candy {which you can't have either, sweet boy} BUT you sure can dress up!!! :) So let's focus on the positive here... :)
I'm thinking either:
Lion - because Mills takes his monthly pictures with his lion stuffed animal, so it would be fitting of the first year's Halloween, right?
Giraffe - because Mills does love giraffes! Between Sophie and his sleep sounds giraffe, he's practically always got one with him!
Monkey - just because he'd be a stinkin' cute monkey in this little costume.
Or, a little Frog Prince - because A: he is my little prince, and B: how many more years will he just beg me to dress up like a frog prince for Halloween?? Haha, gotta get my choices in while I can! :)
And after all, he does help do the dishes...so that should count as prince material in any girl's book! :)
I mean, am I right or am I right???
{even if he blows raspberries while he does it!}
:)
So what do you think Millsy should be for Halloween? Which costume do you like best? Help a baby {boy} mama out! :)

More birthday celebrations and Monday night tv!

We had a great weekend celebrating Nicholas' bday again with all of his family in town! As usual, the guys played a lot of golf and Jennifer and I got to do some shopping on Saturday (I practiced a lot of self control, unlike my former habits).  On our way to dinner Saturday night:
my sweet little man
...singin' a little song, haha :)
and presh cousin Gray!
We went to Coast and it was great! The fried okra salad (what? oxymoron? ha!) was definitely my favorite!
The Easterling boys!
so sweet!
Would you look at those crystal-blue eyes?!? Gorgeous!
cute family pic!
Kisses from Aunt Jesser! :)
Mills liked playing with cousin Gray's toy!
Our brief attempt at a family picture!
Adam and Aunt Kelley
Nicholas blowing out the candle on his double chocolate cheesecake..Mmmmmm!
(unfortunately I got crazy shadows on the pic, boo!)
Little Easterling family photo shoot while Nicholas went to get the car!
How cute are they?!?
The boys had a fun time playing together over the weekend, too!
This was right before bedtime, hence the pre-PJ nudie look!
Hehe, silly Millsy faces...
cousinly fun :)
Gray and Sister Reese
Mills was not ready for everyone to leave on Sunday morning!! :)
We had a great time!

And since it's Monday - aka best tv night ever - what are YOU watching this evening?!?
Lots of our favorite shows had their season premiere last week, and we're looking forward to the following:

How I Met Your Mother
Sooooo funny - this video is from one of my favorite episodes, haha, just to get us in the spirit! :)

Chuck
One of our top favorites! If you don't watch this, you should! :)

Castle - another favorite!
We also checked out The Event and Chase - two new shows - last Monday night (since 24 ended last season we needed some Monday night replacements, ha) and are hoping they'll be good.  We watched Flash Forward last season, but it wasn't renewed (so sad!), and it seems so similar to the plot of The Event...hmmm, we'll see.
As for other nights of the week, I'm going to catch up on Glee (and hopefully talk Nicholas into it to) so we can get on board for this season.  We're also still watching The Mentalist and Criminal Minds - old ones but still good. We've kinda moved past NCIS this season. Oh, and we just caught the season premiere of Dexter last night on Showtime. This show is so twisted and crazy, but absolutely keeps you on the edge of your seat! I've heard such great things about Modern Family that I also want to catch up and get on board with that one, too (as if we need any more, right??)!  And we can't wait for the next season of Covert Affairs (hoping it will continue!)...too bad we have to wait until next summer! We DVR all of the shows though, so we can watch on our own time. Plus, we're spoiled now and like to fast-forward through the commercials!
What are you watching this season???

Happy birthday to my love!

My sweet hubby is 29 today!!!
Last night we celebrated with the Yoes (and their brother-in-law!) at O-Ku! :)
The sushi was great, and 1/2 price rolls before 7pm - can't beat that!
Somebody was trying to get his hands in the chocolate. Just like his momma daddy! ;)
He got a teensy-weensy little taste! It was, after all, a special occasion!
Family pic:
The girls!
Luke!!!
Haha, we were all taking couple/family shots, and Luke felt left out so he opted for a solo shot. :)
Thanks, Calee and Robert - we had so much fun with y'all!

Today, on the official bday, Mills and I met Nicholas at the hospital for lunch!
Mills eating puffs while I got everything together.
"I'm ready to go, Mom!"
The birthday boy and his boy!
We went to a little Jamaican place called Fuel - yum! They had a fun little outdoor area and Mills thought the fountain was pretty cool.
Random little bus that Mills liked looking at:

We had a casual dinner tonight at home and watched the Miami game. Nicholas is a big fan, so his birthday was obviously made better by the fact that they won, haha! Last year, part of Nicholas' birthday present from me was a Miami outfit for Mills.
Last year:
Haha! And this year:
Funny how much difference a year makes, huh?!?
Before I put Mills' PJs on I let him come down and show his dad his team spirit while the game started and Nicholas opened his presents.
He wanted to eat the paper...no big surprise there! :)
Cheering on the Canes with Daddy!
And I LOVE this picture:
It totally looks like he's cheering!!
{In all actuality he was arching and whining to get down in the floor and play, haha, but who has to know that...besides you and I of course???}  :)
And a quick family picture during a commercial break, compliments of the self-timer! :)
And then some sweet friends came over and we enjoyed the rest of the game...hanging out right after the game ended:
We had a great time celebrating, and we get to continue the festivities as Nicholas' family comes in town this weekend.
Happy Birthday to the best husband {and father} in the whole wide world!
